Here's a tropical twist on classic cornbread: Pineapple & Banana Cornbread—moist, lightly sweet, and bursting with fruity flavor. Perfect as a breakfast treat, snack, or side for savory dishes.


๐Ÿ๐ŸŒ Pineapple & Banana Cornbread Recipe

✅ Ingredients:

Dry:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup light brown sugar (adjust to taste)
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional but delicious)

Wet:

  • 1 ripe banana, mashed
  • 1/2 cup crushed pineapple (drained slightly but not dry)
  • 2 large eggs
  • 3/4 cup buttermilk (or whole milk + 1 tbsp vinegar)
  • 1/3 cup melted butter (or coconut oil for more tropical flavor)
  • 1 tsp vanilla extract

๐Ÿฅฃ Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x9-inch pan or line with parchment.

  2. In a large bowl, whisk together dry ingredients: cornmeal, flour, brown sugar, baking powder, baking soda, salt, and cinnamon.

  3. In a separate bowl, mash the banana, then stir in the pineapple, eggs, buttermilk, melted butter, and vanilla until well blended.

  4. Pour wet into dry and mix until just combined. Do not overmix.

  5. Bake for 25–30 minutes or until golden and a toothpick comes out clean.

  6. Cool in the pan for 10 minutes before slicing. Serve warm with a drizzle of honey or a pat of butter.
