For the Pie Crust (or use store-bought if preferred):

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the Filling:

  • 2 cups fresh blueberries
  • 2 cups fresh strawberries, hulled and halved
  • ¾ cup granulated sugar (adjust to taste)
  • ¼ cup light brown sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (optional)
  • Pinch of salt

For the Top:

  • 1 egg (beaten, for egg wash)
  • 1 tbsp sugar (for sprinkling)

1. Make the Crust:

  • In a large bowl, whisk flour, salt, and sugar.
  • Cut in the cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  • Add ice water a tablespoon at a time until dough holds together when pinched.
  • Divide into 2 disks, wrap in plastic, and chill for at least 1 hour.

2. Make the Filling:

  • In a large bowl, combine blueberries, strawberries, sugars, cornstarch, lemon juice, zest, vanilla, cinnamon, and salt.
  • Gently toss and let sit for 10–15 minutes to allow flavors to meld.

3. Assemble the Pie:

  • Preheat oven to 400°F (200°C).
  • Roll out one dough disk and place into a 9-inch pie pan.
  • Pour in the berry filling.
  • Roll out the second dough disk and lay over the top, or cut into strips for a lattice crust.
  • Seal and crimp edges. Cut slits in top crust if not using lattice.

4. Finish & Bake:

  • Brush top with egg wash and sprinkle with sugar.
  • Place pie on a baking sheet to catch drips.
  • Bake for 20 minutes at 400°F, then reduce heat to 350°F (175°C) and bake for another 35–40 minutes, or until crust is golden and filling is bubbly.

5. Cool & Serve:

  • Let pie cool for at least 2 hours to set the filling.
  • Serve warm or chilled, with whipped cream or vanilla ice cream 🍦!
